Feed The Mommy——日式照燒三文魚和蘑菇小白菜伴蕎麦

快速解决的午餐

再次让我脸皮厚厚的分享我“自创”的快速料理。

拌面酱料:

  • 1汤匙麻油
  • 1汤匙日本white dashi
  • 1汤匙酱油
材料:
  • Soba或任何你喜欢的面条吧
  • 任何菇类,多种都可以
  • 小白菜
  • 三文鱼
  • 奶油
  • Teriyaki Sauce
  • 白芝麻
  • 青葱
做法:
  1. 三文鱼先用teriyaki sauce稍微腌制以下 (我在巴杀买的三文鱼,都会请uncle帮我切片,煮起来方便)
  2. 依照包装上的指示煮面条。在煮面条的最后一分钟下小白菜。
  3. 热锅,蘑菇用奶油炒一炒。
  4. 起锅,煎一煎三文鱼。
  5. 煮好的面条和小白菜,和酱料一起捞一捞。
  6. 铺上煎好的蘑菇和三文鱼,撒上青葱和白芝麻即可。
  7. 找个光线好的地方,拍张照片。呵呵。

Feed The Mommy——Cheat Pizza or Wrap

When I cook for only myself, I like to cook as simple as possible, least effort required but still taste good.

I always turn to my mom (if I'm cooking Chinese food) and Pinterest if I need any inspiration. As I've taken too much pasta (and bacon!) in the previous weeks, last week I bought a packet of wrap, and there goes my life with cheat pizzas and wrap for lunch.

Cheat pizza is great, but I have no imagination and only made tuna pizza. That's absolutely boring. So I go to Pinterest and search for pizza toppings. And boy oh boy, I never regret!

Mushrooms, Cherry Tomato and Spinach on Sundried Tomato Pesto

I've got this idea from here. I've always loved sundried tomato pesto but never have I thought of using it as the base of the cheat pizza.

I did not have basil, I used baby spinach to ensure I have my daily greens. I actually top baby spinach on the pizza after it's done baking but it wasn't show in the picture.

Instead of using just Parmesan, I used my premixed package of cheese, with cheddar, Parmesan and Mozzarella, used primarily for baking. I think this premix is the life saver for people like me who do not want to grate the cheese myself.

And again I made some changes on my own, based on whatever I have. I didn't have dill so I skipped it. I didn't mix the cream cheese with garlic, instead I just spread them separately in layers on top of my wrap. I used my premixed cheese, I didn't add onions because I was feeling lazy, I didn't have rocket leaves so again I used baby spinach.

Love every bite of this pizza! Will definitely do this again when there's any promotion on avocado!

I've got this idea from here.

But if you noticed, the author of the page says avocado dip. Mine? It's just avocado. I was too lazy to whip up the dip and I like avocado, I'm confident that with just plain avocado it'll taste good too. And I'm right.

I didn't quite like cauliflower so I replaced with broccoli, I didn't have chili powder, garam masala etc, so I seasoned the chickpeas and broccoli with only pepper, salt and mixed herbs.

As you can see from the picture above, I made so much fillings, my wrap cannot be wrapper and I ended up eating it like a pizza 😅

Buy a packet of wrap (always buy garlic flavoured!) and give it a try! It's soo sooo soooooo convenient and you can still make yourself healthy meal.

Feed The Mommy——My Very Own Version of Carbonara

I like carbonara, but I haven't been eating for a long time due to my pregnancy. (The egg used in carbonara is not fully cooked) Actually, pregnancy is not the only reason, I can't feed my son half cooked eggs too, so I actually haven't been eating carbonara for a long time!

I used to cook carbonara using Jamie Oliver's recipe. I roughly remember how, but I wanted to be sure so I tried to search for it. But I can't find it! Dang! So instead, I browsed around a few other websites, and decided to just make up my own.

And you know what? I like my version, so much so I'd like to write it down for my future reference.

Carbonara and a cup of decaf

Ingredients:

  1. Two slices of streaky bacon
  2. Two cloves of garlic
  3. A handful of baby spinach
  4. An egg
  5. Mixture of parmesan, cheddar, mozarella and feta cheese
  6. A tablespoon of cooking cream
  7. Pasta of your choice
Method:
  1. Separate egg white and yolk.
  2. Add the cheese mixture and cream into the egg white.
  3. Dice the bacon and mince the garlic.
  4. Cook the pasta as per instructed on the packet and fry the bacon.
  5. As the oil from streaky bacon ooze out, add the garlic into the pan.
  6. At the last minute of your pasta cooking, add the spinach (you do not want to overcook them, so one minute is just nice)
  7. Drain the water from your pasta and spinach, keep some pasta water. 
  8. Add the pasta and spinach into the pan, stir them well so the pasta would soak the delicious bacon oil.
  9. Take the pan off the heat.
  10. Slowly pour the egg white and cheese mixture in and stir them well. (If you think it's too thick, you can add a little pasta water you keep, I usually don't)
  11. Serve the pasta in a plate, make a small hole in the middle and place the egg yolk.
  12. Stir the pasta and egg yolk well before you eat, the heat from the pasta will cook the egg.
Tadaa~~~ 

I really like how creamy this pasta is. Besides, a plate of good carbonara and coffee for lunch, makes it feel like I'm having a luxury me time in a cafe! (Even though I'm just really rushing off to cook myself a meal when baby is sleeping!)

Modified Martha Stewart's Outrageous Chocolate Cookies

It's Christmas again! But this year, no party, no gift exchange, no... basically nothing.

But it doesn't feel like year end if I didn't fire up my oven and bake something. Plus I really want to give something to the school for helping all these months, so, I decided to bake the outrageous chocolate cookies I baked two year ago. And this first batch, as I remember it, was too sweet, even though I had already cut down the sugar from the original recipe.

It's so rich with chocolate, you'll have sore throat if you had too much!

So, when I decided to bake for second time, I know I still have to do something about the sugar level. So, this is what I do to make it somewhat to my likings.

Ingredients:

  • 4 ounces of semisweet chocolate, 4 ounces of unsweetened chocolate, roughly chopped
  • 4 tbsp of salted butter (I always use salted butter, no matter what the recipe suggests)
  • 2/3 cup of plain flour
  • 1/2 tsp of baking powder
  • 1/2 tsp of salt (but for this batch unfortunately I realized I accidentally put 1 tsp)
  • 2 large eggs
  • 120grams of brown sugar
  • 1 tsp vanilla extract
  • 12 ounces of semisweet chocolate chunks (I used chocolate buttons)

As of the methods, I followed exactly the same as the original recipe. My oven can be a little less hot on the bottom rack, so the bottom rack has to be baked for 15 minutes while the upper rack baked for 12 minutes. 

I packed the cookies into a very non glamorous disposable take away container (I wished I could have bought the nicer packaging on weekends when we go out) and drew a simple card and wrote a thank you note. 

I'm glad The Man told me it's good when I asked him to try (whether it's good enough to give away) and the lovely teachers told me it's nice too :)

I'm glad I made it, even though I finished baking after 12am! >.<

I actually love midnight baking.

I Love Breakfast

I love breakfast. Breakfast is simple, breakfast is something I look forward when I wake up, especially when I'm tired. I used to LOVEEEEEEE my coffee, the convenience of my Nespresso, but that has to wait for a while now.

My breakfast used to be bread and coffee, either at cafeteria/kopitiam with colleagues, or on my own desk. It's either eaten in a rush, or it's eaten together with emails and work (Sometimes in silent mode during a teleconference!), and I didn't get to taste the food, at all.

After resigning from work, taking care of my son full time. Breakfast is the best time of my everyday (if I wake up early enough to have one). There was a friend commented that I am so free that I can make such delicious breakfast.

Pardon me, free? Are you serious?? Come on man, think again!

My son sleeps very late, typical night owl and wakes up very late everyday. Sometimes The Man and I have breakfast together, and I continue having my "happy hour" after he leaves for work. Sometimes he had breakfast first, while I'm cooking myself a sumptuous breakfast. Taking my own sweet time because seriously, this one to two hours is very precious!

Another reason I shall enjoy my breakfast to the fullest, is I never know what time is my lunch :P

I wonder what life will be when second one comes along. Oh well...

寻找魔戒之旅(四)—— Cromwell最美味的一餐

不起眼的小餐厅

Armando's Kitchen,于Cromwell小镇一家小而不起眼的餐厅。不过,真的要谢谢姐姐选上了这家用午餐,因为,它成为了我们公认的全程最美味的一餐(不包括我妈妈下厨煮的那些餐!)。

而为什么我们会在这里用餐呢?其一原因是,如果坐餐厅户外的桌子,是看湖的,这对姐姐来说是卖点!

这家餐厅的份量不太大,我们五人共吃这三盘,觉得很美味,再加上肚子还有空位,就忍不住再点了一份Gourmet Beef Pie。

Gnocchi在这里是很少见的,而即使有在餐点里,也不一定好吃,多半都不太好吃的说⋯⋯而Armando 的 Gnocchi真的恰到好处,不太硬不太软,而且也把汤汁的味道融入了。非常好吃!

而pizza呢,不太厚不太薄,用料大方,烤得恰到好处,嗯⋯⋯现在想起来都饿。

Caesar salad好吃,但是没什么可以称赞的,salad就是salad而已。

而beef pie呢,啊⋯⋯那牛肉馅真的太美味了~~~究竟是怎么煮的呢???

哦,值得一提的,就是走进餐厅,那扑鼻而来的咖啡香,让你忍不住要点一杯咖啡。

后来,结帐的时候,我看见新鲜出路的apple pie,我也忍不住买了三个!但是,当时饱了也没吃,就留到Mount Cook了,正等着晚餐的时候,大家你一口我一口的,医肚子。要说的是,已经摆着几个小时了,都冷了的apple pie,其实还是很美味!

我只能说,如果你从Queenstown到Mount Cook,有那么一点时间,安排到Armando's Kitchen用餐吧!你不会后悔的!

Fourth Week into 5:2 Diet

I have to make some adjustments. 

And it's ok, life is about making adjustments to suit ourselves.

6-9 months after my pregnancy, I lost most of my baby weight, in fact, I was lighter than my pre-pregnancy self. I fit into most of my old clothes but not skinny jeans and super fitting dress. Fats are accumulating around my tummy and thighs specifically. With my almost non-existence exercise regime, I know weight is not the number I should be focusing on. Fats are much lighter than muscles. Weight just doesn't reflect how much muffin top I've accumulated.

After life got into a more normal routine, I go back to yoga once a week when I can. Some running here and there but not regular at all. Muscles still do not tone up but a bit better after a year. And I still do not fit in skinny jeans. I gave up.

However, home trips after home trips, Christmas party, New Year party, Chinese New Year, friends and family gathering etc., fats are building up. After my Taiwan trip, even the looser shorts and pants are getting tighter! 

RED ALERT!

This is the reason I jumped into the 5:2 diet ship with The Man.

Three weeks after the diet, I lost almost 1kg, and the tightness in shorts and pants are loosing up. That's great! But something not so great happened too.

I realized my skin looks dull. My face looks aged.

I have no idea whether it's related to this 5:2 diet, but for this period of time, this has been the only big change in my life. So I suspected it.

Therefore, on my fourth week, I make a little adjustments on my diet. I still try the intermittent fasting diet but no longer stick to 500 calories. I discard the idea of calories, just eat lesser than normal.

Yesterday was my fast day, and the menu goes like this:
Breakfast: Overnight oat with blueberries and walnuts, and a cup of black coffee
Lunch: Quinoa with Halloumi cheese, cherry tomatoes, baby spinach and mushroom
Dinner: Salad (Lettuce, cherry tomatoes, hard boiled egg with sesame sauce)

I've always wanted to try quinoa but never did until my friend told me she's been cooking it. So I asked her how she cooks it, and I too got into this "health buff".

This is easy to cook, and I'm totally in love with halloumi cheese! :P

Ingredients:
  1. Quinoa
  2. Cherry tomatoes, halved
  3. Mushrooms, sliced
  4. Baby spinach
  5. Halloumi cheese, cubed
  6. Garlic, minced
  7. Salt and pepper 
Method:
  1. Wash the quinoa under running tap water. Boil it for 15-20 minutes. Quinoa absorb a lot of water, so make sure you drain them well after cooking.
  2. On the frying pan while quinoa is cooking, pan fry the halloumi until they're golden brown and set them aside.
  3. Sauteed the mushrooms, until they're brown and no more liquid coming out, add garlic and cherry tomatoes. And followed by baby spinach for the last as they cook very fast, you do not want to over cook them. 
  4. Drain your quinoa, and add them into the pan together with halloumi cheese.
  5. Give them a bit of stir, add salt and pepper to taste.
  6. Serve.
My target for 5:2 Diet is only until next week. After that, I'll be off for holiday with my family, that's when any diet is useless :P

Feed The Mommy——Baked Egg and Caprese-Style Portobello Brekkie

Breakfast is my favourite time of the day, because I'll be awake but not my son! Haha! Don't get me wrong, I love my son, he's cute and cuddly. But mommies like alone time too!

I usually try my best to wake up earlier than the two of them to whip up a good breakfast for The Man and I. But sometimes the gravity in the bed is stronger than anywhere else (like today) and I have my breakfast alone after The Man left the house to work.

Baked egg, caprese-style portobello, kiwi and coffee 

Baked Egg

You can use any ingredients you like, but for me there are always the two same versions (because I'm too lazy). It's either mushrooms or spinach and cherry tomatoes.

For mushrooms, I usually use button mushrooms, cut them into thin slices and sauteed them with butter on pan. Once they're pretty and brown, lay them in the bake dish, season with pepper and salt if you like, some herbs too, cheese (I use a mix of cheddar and mozarella) and lay the egg on top of the mushroom.

Easy peasy.

For spinach and cherry tomatoes, wilt the spinach over hot water, and dry them. Half the cherry tomatoes. Season with salt and pepper, and add cheese (For this I use feta). Lay the egg on top of the spinach and cherry tomatoes.

Place the bake dish in a hot water bath. Bake them in the oven at 180 Degrees for 11-15 minutes depending how cooked you want the egg to be. I like it runny so I always bake it at 12 minutes.

Caprese Style Portobello

This is super simple. Remove the stem on the mushroom. Half the cherry tomatoes and season it with salt, pepper and basil. Coat the portobello with some cooking oil, lay cherry tomatoes in the mushrooms, add mozarella cheese.

Place them on top of aluminum foil as the liquid from portobello will dirty your pan if you don't. It's for easy cleaning afterwards.

Bake this at 180 Degrees until the cheese is brown and pretty. It's about 11-12 minutes.

Third Week of 5:2 Diet

I'm too lazy and busy to record every meal of my 5:2 diet.

This is what I had for today's breakfast and lunch. I'm probably eating oat again for dinner. I'm just too lazy to think.

Breakfast:
Rolled oat cooked in milk, with chia seeds, blueberries and walnuts 

Lunch:
Salad (Butterhead lettue, cherry tomatoes, egg) in Japanese sesame sauce, with additional white sesame toppings and a cup of black coffee

According to the app my friend recommended to me (Lifesum), the calories intake are estimated as below:
Breakfast: 122 calories
Lunch: 147 calories

But I believe what I had is somewhat higher than the estimation, so I think I've intake 300 for today. 

Feed The Mommy——Tuna Cakes with Lemon Dijon Sauce

Ever since I embarked in the 5:2 Diet journey, I hardly have to cook. Besides, my son is on a strike, instead of eating like a toddler, he went back to eat baby food like puree and cereal. It kind of makes my life easier really, I hardly do any cooking anymore. And groceries last me for a longer time!

Such a bliss!

Anyway, I still browse easy recipes every now and then. Recipes for one, recipes that is baby friendly (and edible for adults), recipes for lazy person, quick recipes etc. And my recent favourite is Mediterranean diet, they seem to be healthy and quick to prepare!

And I tried tuna cakes yesterday! And I love it so much I'm going to make more next week!

I happened to see this recipe on Pinterest, and thought to myself, "This is simple enough for me!".

I do not measure everything accurately, I just made some estimation based on the recipe. And because it's my first trial, I made it with one can of tuna instead of two.

Things that I will like to change for my next trial:
1. Add more Dijon in the sauce
2. Crush in some garlic
3. I might want to add one egg for a can of tuna
4. Eat this with burger bun
5. Add a lot more chives! Chives is brilliant :P

If you are using tuna in olive oil, keep the oil aside after draining and use it for frying the tuna cakes.

The lemon Dijon sauce is the soul of this dish, so make sure you fine tune the taste of the sauce to your likings before serving.

Definitely a recipe to keep :)

I'm Fasting, Intermittently

Long time ago, when we still spent time in front of TV after dinner together (you got it, that's pre-baby time), we learned about intermittent fasting on BBC channel, from a doctor named Dr. Michael Mosley.

After that, The Man had tried this diet, and it helped him to lose a fair bit of weight. At that time I didn't bother to try. My food is more important!

After baby, we've all put this diet thing behind and never talked about it. Needless to say, we both gained some baby-weight. And recently, The Man wanted to go back to the diet again. There were also some sharing on Facebook, with menus for Asian diet.

This time, I went on board to the diet with The Man.

So what's 5:2 diet? If reading the lengthy article is not your thing, you can chose any two days of the week to go on fasting. But you don't have to go totally food-less, just lesser food. How little? Well, for men you are allowed 600 calories a day, while for women, it's 500 calories a day. That means, you're spreading calories of one meal from your normal day, and stretch it out for 24 hours. The rest of the five days, just eat normally. As simple as this.

This is my second week now. We chose Tuesday and Thursday as fast days, yes together because I'm preparing breakfast for the two of us everyday so having the same diet makes it easier for me.

On my first day, last Tuesday, I felt terrible. I kept thinking about food. Sometimes I thought of them when I felt hungry but most times, I was thinking about the sinfully delicious food for no reason. It's simply craving! But with some determination, I managed to survive. The next day, I ate normally.

And on the second day, Thursday, surprisingly the fasting went on pretty easily. No craving, no hunger! I think my body has got used to it. And after a weekend of eating and feasting, my second week of fasting still went on smoothly.

So come to think about it, we actually do not need so much food. We are simply craving!

So here, I just want to share what I eat on my fast day. These are my three meals yesterday.

Breakfast: Steamed sweet potato, baked egg with cherry tomatoes (I added a bit of mozzarella cheese for myself but not for The Man), a bit of grapes. And a cup of black coffee, without milk and sugar.

Breakfast 

Lunch: Cherry apple

Dinner: A bowl of oat in milk, with some walnuts and raisins, and some steamed broccoli.

In between, if I got really hungry, I munch a bit of walnuts. And also drink lots of water.

I am not super duper strict on sticking to 500 calories I think I ate about 500-600, closer to 600 I would say. But if you want to find out how much calories for each type of food you want to take, you can try this website. 

Some menu recommends boiled chicken breast for dinner. I think that's terrible, it makes me feel very sad to fast. I'd rather eat oat than boiled chicken breast seriously. If you want more Asian menu, you can try google 5:2轻断食.

To clarify things up, I'm not looking into losing a lot of weight (in case you're going to say anything :P), I'm just looking into losing some tummy fat from pregnancy. And hey, Dr Mosley said this helps in longevity!

Let see how long I will stay in this diet, with my typical 3 minutes enthu!

Feed The Mommy——整个番茄饭配牛油虾

最近比较烦。

烦什么呢?烦煮饭。儿子开始吃大人食物,而且越来越喜欢吃。从开始吃固体食物,他就对粥恨之入骨。刚开始是每喂一次就闹一次。我以为是口味不合适,煮了很多不同的口味,但没有一样行得通。所以,都是米糊、面包为主。后来还改吃意大利面。

后来,发现他会吃饭了,就偶尔给饭。白饭,淋汤,一点胡萝卜、一点豆腐、一点鱼、一点肉碎⋯⋯反正就看当天我煮的是什么。

听起来好像没有什么问题。

问题就在,以前他还在天天吃米糊的时候,我一周可能也只煮一两次的白饭。偶尔吃萨拉,偶尔吃三文治,偶尔吃面线,偶尔吃面,偶尔吃意大利面,偶尔吃麦片⋯⋯可以多懒就多懒。

现在,要想破头脑,什么比较容易煮(又好吃的),有没有鸡蛋的(孩子对蛋白敏感)⋯⋯逼的我最近煮饭比以前多,出门也吃中餐/日本餐。真的是,越来越麻烦!

想想,不如让他试试整个番茄饭,再另煲一锅汤就可以了。可是,我单单吃番茄很淡吧,不如试试弄点虾。

就这样,锵锵锵,我们的一餐就搞定了。

整个番茄饭,牛油虾,蒸椰花菜




材料(一人两餐份/两人一餐份):

  1. 一个番茄,切丁
  2. 蒜头,剁碎
  3. 牛油,少许
  4. 盐,少许
  5. 虾(你爱吃几只就几只嘛),剝壳去头,用一点点的盐腌制

做法:
  1. 用牛油把蒜头和番茄爆香,然后加入饭锅和白饭一起煮
  2. 用牛油把虾在平底锅稍微煎一下,切记不可煎得太久,煎老了不好吃。一边两分钟左右即可。
  3. 白饭煮好了,用筷子把白饭、蒜头和番茄搅合。
  4. 请慢用。


简单快捷的一餐

后来,我发现我忘了很重要的东西,炸蒜头!我妈妈给我一盒炸蒜头,我很爱用,太好用了,不管加进哪道菜都马上变香。


后来才加上的炸蒜头!

美中不足的是,要为虾剝壳,就是准备那里稍微多花点时间。

Feed The Mommy——Aglio Olio

Where did all the time go? One moment I am the struggling new mother who was trying to balance everything, and try to stop worrying; another moment now, I realized it's the end of November, and I have not blogged a single entry for more than a month!

A month, is exactly how long I have been with my mom. Two weeks for having her here in Singapore with us, so that I can help out The Man at the clinic when he needed help. Another two weeks for the baby to go back to hometown. It's not easy to set up a new clinic, but I'm glad he finally did what he always wanted.

The work to be done before the clinic opens was tremendous. I know nothing in dentistry, all I could help is to build a simple website for his clinic, and also a business page in Facebook. It didn't sound much, but for someone who knows nothing about coding and website, it almost killed me. I worked pass midnight for days in a row just to get one small item done. I watched tonnes and tonnes of Youtube tutorial (All Hail Youtube!), I got help from my Bestie and her husband! Thank goodness, I wouldn't have completed the page without them!

Now that things got settled a little more, it's time for me to start cooking, taking photos, trying to learn art all over again.

Simple and delicious

I cook aglio olio a lot because it's simple and delicious, suits the lazy me. I like my food to be simple most of the time. So I always only add one ingredient for my aglio olio, chicken, mushrooms, bacon are the most common ingredients I add. (No more bacon for me after the terrible news for bacon lover!) Most importantly, A LOT OF HERBS AND SEASONING! Never get stingy with that!

With the new packet of deep fried garlic that my mom got me, and the truffle oil from Antwerp, my aglio olio got even better, at least to me.

Ingredients:

  1. Garlic (as much as you like! The more the better!)
  2. Chicken or mushrooms or shrimps (If you're cooking with chicken, marinate them with salt, pepper and herbs)
  3. Pasta of your choice, I personally prefer spaghetti or angel hair
  4. Salt
  5. Pepper
  6. Mixed herbs
  7. Red peppercorn
  8. Dried chili
  9. Deep fried garlic
  10. Truffle oil
  11. Parmesan Cheese
Method:
  1. Cook the pasta to al Dante 
  2. While the pasta is cooking, pan fry the ingredients of your choice (with butter, no other than that if you want your aglio olio to taste good)
  3. Toss in the chopped garlic when the meat/seafood/mushrooms are almost cooked
  4. Add items 4-8 and toss them around
  5. Add the cooked pasta, give them a good stir
  6. Sprinkle with grated Parmesan cheese and deep fried garlic, mix them
  7. Plate your pasta, sprinkle a teaspoon or two of truffle oil
  8. Serve
It's so simple, it's ready in 15-20 minutes.

Now, time to go wash up before baby wakes up :)

Feed the Mommy——Creamy Tomyam Spaghetti

Both The Man and I had creamy tomyam spaghetti in different restaurants before, and we both kinda like it. Then one day, we were dining out at a food court, The Man ordered one and that very last one wasn't good at all.

So, I decided to try. But seriously, I've never cooked one before. I gathered what I needed to buy and went to the market, to the familiar stalls. I asked the uncle if he has tomyam ingredients, he pointed to me. And asked me how much I needed. Damn, I was totally clueless! I told him, I do not know. Uncle almost fainted. But he's being nice, he asked me how many people are eating and roughly gauge the amount for me. So nice of him!

Then, I went home. And called my mom! Lol!

My mom said she had never cooked a tomyam spaghetti before, so she has no idea. She never eaten any too. But she gave me instructions to tomyam. So I just add coconut milk as I like to make it creamy.

Creamy chicken tomyam spaghetti

Ingredients:
  • 2-3 kaffir lime leaves 
  • 3-5 slices of galangal
  • 3-5 stalks of lemongrass stalks
  • 3 shallots
  • 1 tomato
  • Mushrooms, quantity of your liking
  • 10 Prawns for the two of us or chicken fillet (the next day when I made the second attempt, I used chicken fillet instead of prawns)
  • 5 tbsp of coconut milk for one serving (add one at a time, to gauge what's the creamy level that you like for your pasta)
  • Store bought tomyam paste
  • Chilli if you like extra hot
  • Lime if you like it sour (as coconut milk will make it less sour)

Method:
  1. Prepare kaffir lime leaves, galangal, lemongrass, shallots and tomato to boil in water for 10-15 minutes.
  2. Then, add in the tomyam paste (amount based on instructions of the tomyam paste you buy), for me I added 3 tbsp. 
  3. Add mushrooms and boil the soup for a good 10-15 minutes.
  4. (I cooked the tomyam way ahead before I cooked the pasta so I actually stopped here before I continue. But in case you do these all at once, you can cook your spaghetti at the same time to al Dante.)
  5. Scoop the tomyam to separate pan. Boil the tomyam, add prawns to cook for a few minutes. 
  6. Add coconut milk one tbsp at a time to reach the correct creamy level that you like. Add chili if you like.
  7. Stir in the spaghetti.
  8. Dress with coriander.
  9. Serve.
  10. Cut a lime to serve alongside if you'd like it sour.
The first attempt was good but it's not creamy enough. We didn't even take photos, the whole dinner happened in a rush. It was good but not great.

I made more tomyam than I needed so I have one serving left for my lunch. I reattempt the dish and walaaaa~ It's finally creamy enough. But sadly, I forgot the coriander yet again. But it's good :)

Anyway, do not cook the tomyam with just the tomyam paste, it won't be fragrant enough.

I have lots of ingredients left in the fridge, my mom instructed me to keep them in freezer, they'll last. I vomitted last weekend, so, I guess no tomyam for this week. Stomach needs to rest.

Chocolate and Peanut Butter Granola Bars on the Go

The Man has been very busy, going to bed by 1am has become a luxury. Mornings are usually in a rush, no time for breakfast. Sometimes, all he had for the mornings is a cup of Milo. That will last him until lunch.

I hate skipping breakfast. I tried to wake up for his breakfast, but I didn't manage recently. Lazy, plus I also go to bed as late as he does. I just couldn't. I always wonder how he manages to sleep only a few hours a day.

I have Pinterest on my mobile. I like Pinterest because I can always find something interesting. Even though I might not try any of them, but I always keep them in folders. Just in case. I've came across this simple granola bars recipe on Pinterest. And hence decided to give it a try so that this granola bars can serve as his breakfast when he's in the rush. Or maybe energy bars in his bag during his busy days.

So last night, after I put baby into bed, I started my midnight baking. It's pretty simple so it didn't take a long time.

First trial, I'll give them a 8/10. They look like shit but they taste good. I love the peanuts and peanut butter, so fragrant. Especially right after baking them, my kitchen smells so good!! I felt that I could eat my kitchen!

I think I could make improvement on the moisture of the bars. Probably I should add a little bit more honey next time, to make it more gooey. Besides, I should really make them flatter, nobody had their granola looks as shit as mine! And maybe, I will try baking them shorter than 25 minutes. And also try the non bake method too!

Feed the Mommy——腊肠土豆懒人餐

很久都没有好好分享,甚至都没有打开自己的博客。

今天难得我的儿子睡觉了,而且我也不打算开工(是的,最近有工作哦,不过暂时不告诉你是什么),我们两就坐在客厅,喝酒吃零食,看新加坡大选新闻。

我没有很认真的在看,我就懒懒的赖在我的懒人椅,聊天啊,上网啊,玩游戏的。

八月游澳门,在家赖了两周,还是回来了。几乎每天开火,为的是省钱,也是因为带着孩子很难天天外吃。这里分享我上个月煮的懒人餐。(其实我每天吃的都是懒人餐!)

腊肠土豆饭

食材:

  1. 米饭
  2. 腊肠一条
  3. 土豆一个(小土豆)
  4. Green Peas
  5. 蒜头
  6. 酱油
  7. 胡椒
做法:
  1. 爆炒蒜头,然后下腊肠、土豆和gree peas炒一炒。
  2. 加点酱油和胡椒在炒一下,然后把食材都混入米饭里面。
  3. 如同往常一样用电饭煲煮米饭。
  4. 煎个蛋(或是弄个蛋花汤)配饭,就没有那么单调。
真正在厨房忙的时间,不到半小时。就这样有饭吃,不是很好吗?:)

吃饱了又可以继续忙家务,忙宝宝,忙东忙西……

金马轮咖啡饼店——最好吃的猪扒包!

说完那个很难吃的大利来猪扒包,就该说说我们最爱的金马轮咖啡饼店猪扒包了!

离开澳门之前,我们真的一定要到金马轮去!幸好金马轮咖啡饼店开得早,早上7点开始营业,好让我们来得及赶上10点多的飞机。在澳门街道还是冷冷清清的时候,金马轮几乎是唯一一家开门做生意的店家。跟下午的澳门简直是天渊之别。

快餐早餐,有点太油腻

这家店和六年前给我的印象还是一样,就是港剧里头的茶餐厅,顾客都是熟络的左邻右舍。大家进来打个招呼,寒暄几句。捧着一份报纸,搭下台。安安宁宁的吃一份早餐!

我们一开始,点了两分猪扒包,一份快餐早餐(面包,鸡蛋,火腿,奶茶),两杯奶茶。吃完以后,我觉得意犹未尽。猪扒包真太好吃了,热腾腾肯定是现炸,面包很软,猪扒腌制的味道也够,我忍不住再叫一分。店家外摆得零零总总的面包蛋糕,很想吃,也叫了一分椰丝挞。最终椰丝挞没吃完,太甜了!

大利来记猪扒包

据姐姐到澳门前做的功课,大利来记是澳门数一数二在网路上非常有名的猪扒包。六年前,我们到澳门吃的是金马轮咖啡饼店的猪扒包,至今念念不忘。难得再来澳门,我们发誓一定还要吃金马轮的猪扒包。

不过,一抵达的当儿,刚刚从营地街街市走出来,在议事厅前地看见大利来的广告招牌,就决定试试!

一进到里面,很开心因为当时天气实在太热,有冷气,再加上很有欧洲风味的装潢。我们仨上下游走,选了一个心水位(其实没有什么选择,里面根本就是人满满的)坐了下来。

我们点了一个菠萝猪扒包,一个芝士包,两杯冻檸蜜,一杯冻菊蜜。

先说那个猪扒包,菠萝包干干的,不好吃。猪扒也不是现炸的,上桌时,是冷冷干干的!而且,骨头还蛮多的。这么一个没有优点的菠萝猪扒包,竞卖MOP38!那不是坑人吗?!

再说那个芝士包,一个不知道是不是买回来的面包,再加上超市卖的一片便宜的芝士,竟卖MOP20!佢唔好去抢?!

我们这样一吃MOP116,整付身家被吃掉百分之十(说来好笑,我们当时只有MOP1000),而且水准如此不达标,真是越吃越不爽!

因此,回去金马轮咖啡饼店吃猪扒包的信念就更强了!

如果你像我们一样,因为他的名气而想试试,我劝你千万不要浪费你的钱和你的肚子的空位!

三姐弟24小时澳门长肉记

话说有一天,我和姐姐一块儿坐在家里,正百般聊赖,被她发现亚航有促销。随手搜索,最终被她找到吉隆坡澳门来回机票,其中一趟免费!

她问我要去吗?好啊!免费的,有何不可!但是挨着她的假日已经不够用,我当时也还未决定是否回到工作岗位,弟弟也应该没有假期,结果我们预订周六抵达澳门,周日返家!早上十点多抵达,隔天早上十点多离开,真真正正的24小时!

澳门我们都去过,这一次真的纯粹为了吃!(吃吃吃,嫌自己的spare tyre不够大 T.T)


没想到,都当妈了,我还是逃不过在机场“睡街”的命运。原本想订酒店的我们,想到我们只有得睡三到四个小时,还是免了,钱还是省下来。在麦当劳过夜算了。

是功力退了,还是当妈了真的可以不用睡觉,我当晚睡不着。跟睡不着的弟弟一起在机场游荡,然后等候麦当劳四点钟的早餐。

Feed the Mommy——Lentils Soup

I like to try cooking new stuffs when it specifically being introduced as quick and simple cooking! That's what a lazy person needs.

I've been eyeing on lentils for a while but never bought them until I read that red lentils cook pretty fast. FAST, okay I need that. So I make a mental note to get them during one of my groceries trip and hence the experiments started.

First, I try lentils soup.

Ingredients (one pax serving):

  1. 4 tbsp of red lentils
  2. 1 small potato
  3. 1/2 a carrot
  4. 1 or 2 stalks of celery
  5. 1/4 of yellow onions
  6. Sage leave
  7. Approximately 500ml of chicken stock
  8. 1 tbsp of plain or Greek yogurt
  9. Salt, pepper and olive oil to taste
Method:

  1. Sautéed chopped onions and celery until they're soft.
  2. Add sage leave, chopped potato and carrot and red lentils, lightly fry them.
  3. Add chicken stock to boil, turn the heat to low and simmer the soup for 20-30minutes, or until the soup gets thicken and potatoes get soft.
  4. Add salt and pepper to taste.
  5. Serve with yogurt and sprinkle or extra virgin olive oil (truffle olive oil makes it better).
  6. Serve alongside with a toast :)

I wasn't very adventurous with the yogurt in the beginning, I have my doubts but some websites recommend it. The first time I cooked the soup, I ate it without adding the yogurt till there was a quarter of serving left. Then I added the yogurt, turned out I really like it. Yay! Then the second time, I tried adding the truffle olive oil, it's adding the flavors, I like it!

Lentils and chickpea curry

I also tried cooking lentils and chickpea curry. I kinda throw everything together without really thinking through properly. No good recipe to share here, even thought it didn't suck but it wasn't the best. Maybe I'll try to make it better when I have time. But serving lentils curry with Japanese rice is kinda weird though.
